How’s your week so far?

A lot of people around the U.S participated in #DayWithoutAnImmigrant last week and it was really nice to see everyone on social media sharing their stories. For me personally, it’s important to never forget my parents and their struggles because they came to this country with the intent to provide a better life for myself and my siblings.

Both of my parents came to this country at a very young age. My dad was 19 y mi mamá was 17. As most of my dads siblings came into this country, they all eventually settled in Santa Ana.

Mole Coloradito Deviled EggsFor about 13 years, mi papá worked at a factory making drive-thru sensors making 7 dollars an hour–that was a little under 600 dollars a paycheck. They always paid their taxes, and never sought government aid.

Can you imagine having to feed a family of five on that kind of a budget?

Neither can I.

Pero mís papás lo lograron.

We shared a 2 bed/1 bath house with my aunt and her family. At one point, there were 11 of us living under one roof, and It was always really crowded, but we had no other option.

When I got a little older my mom used to tell me about all of the really tough times, and how my dad used to cry sometimes because he couldn’t even afford to buy me a Happy Meal when I’d ask for one, and it makes me feel like a total brat for not being more aware at that age.

It really frustrates me to see trolls tearing down and making assumptions about immigrants, what would they know about the struggle? We’re all human, and we all deserve the same fighting chance at a decent life. ¿Verdad?

Cooking has always been a stress reliever for me, and in these times I hope you all find something to center yourselves bc self care is very important!

We’re going to make deviled eggs with mole coloradito because I’m kind of obsessed with deviled eggs. No se porque, but they are so addicting!

This is totally off topic, pero is there a song you’ve been stuck on lately?

I’ve had Jenni Rivera’s rendition of Basta Ya on repeat and I cannot get it out of my head! There’s just something about the strong fem presence she had that has been speaking to me lately.

 Que descanse en paz!

Anyways, I’ll see you on Thursday, we’ll be baking up something good!!

I hope you’re having a great week, y espero que estén bien!

I can’t believe it’s Valentines Day, I feel like we were just celebrating New Year’s just a few days ago.

I feel like there’s so much to address since last week, but where do we even begin?

Mole Coloradito Pulled Pork SlidersI met mi media naranja 7 years ago, and this year we’ll be celebrating our 7th anniversary!

We were living 500 miles apart when we first started talking to each other. We’d chat on and off and I thought he was the coolest guy I had ever met. He was funny, incredibly handsome, charming, loved to cook, appreciated art, and had the most beautiful blue-grey eyes I had ever seen.

One weekend, he happened to be visiting San Francisco with some friends (I was living in Fresno at the time), and I jokingly said I’d hang out with him that night since he couldn’t get into the bars yet, and he jokingly agreed. I stewed over wether or not I wanted to make the three hour drive, but after work I rushed home packed some clothes and made my way to SF.

He didn’t think I was being serious, but I made my way to San Francisco that night and we spent the rest of the night walking back and fourth along Pier 39 getting to know each other, and we’ve been together ever since.

Do you want to get married?

¡Por supuesto! But it’s kind of a big expense, so we’re going to wait–there’s no rush!

&

Do you want kids?

YES! YES! YES! If I could, I would have birthed three by now, but that’s not possible, and the odds are against us when it comes to adoption, aaand a surrogate would be too expensive. So we’ll see what the future has in store for us. We’re content with our two dogs for now.

But, enough about us.

Let’s talk about these sliders.

I’ve been having this pulled pork for the past few days for lunch, and I cannot get enough of it!

It’s so juicy and because of the peppers in the mole coloradito, the end product reminds me of birria but a little sweeter. It’s so good!

Because it is a little on the sweet side, we’re balancing our sliders with a crunchy lime slaw.

Make these as an appetizer, or make these as a full-sized sandwich. Make your own rules and be your own bad bitch!

Did you catch the Superbowl?.. Yeah, me either!

I did watch the halftime show though, and it was all sorts of amazing. I’m whatevs when it comes to Gaga, pero she did such a good job! I just kind of wish she would have made an even bigger political statement.

Pero pues, beggars can’t be choosers.

Mole Brownie Tart

We’re making brownies today.

But we’re being fancy, so we’re making a tart. It’s sort of the dessert you want to make on a first date, because it’s super easy to make and it’ll make you look all sorts of good.

We’re also making it today because there’s days when I have a hankering for chocolate on chocolate on chocolate, and this definitely satiates that craving.

Add a scoop of vanilla or chocolate ice cream, y como dice Alexis Mateo, BAM! GET IT BABY!

When you think of Mole, Mole negro is probably the first thing you might think of.

Did you know some Mole pastes can have up to 50 ingredients?

The Mole negro we’re using today has strong notes of plantains, chile mulato, mexican pasilla, black chilhuacle chile, clove, cinnamon, cumin, black pepper, oregano, peanuts and raisins (amongst other things).

No, we’re not crazy for adding Mole to our desserts.

All of the flavors just kind of dance together and hold hands, and it works so well in this tart!

And we’re topping it off with a super decadent ganache! say whaat?

What is everyone doing/making for Valentines Day?

Wether you’re stress eating like me bc you’re tired of waking up to headlines like “President Trump is now speculating that the media is covering up terrorist attacks” and you need something to indulge in because you can’t believe this is real life or you’re simply looking for dessert options for Valentines day bc you want to sweep your chulx off their feet.

You know I got you!
