How are you?

I don’t think my brain can comprehend anymore how so many bad things can keep happening this year!

It’s almost like they sit around and play a dangerous game of Russian roulette but with human/civil rights. ¿Verdad?

We’re only 2 months into the new year and we’ve already lost 5 trans women to hate crimes. Why was that necessary? #BlackTransLivesMatter

I don’t understand why some people are so insecure with themselves that they feel the need to lash out against what they don’t understand.

When we were in college, Billy and I lived a few blocks away from Costco, and it was everything.

It literally was.

Costco was one of the few big box stores we had at Humboldt which kept us pretty sane and pretty well fed (we lived 5 hours away from the nearest city).  We used to buy a rotisserie chicken at least once a week which meant we had tostadas for dinner pretty often because we were on that broke college student budget.

The struggle was so real.

Today, I’m throwing it back to those days. We’ll be making those tostadas using rotisserie chicken for a quick dinner, and tossing the chicken in this mole negro vinaigrette to amp them up!

Pro tip: This vinaigrette would also be great in a salad!

I’m heading to Mexico next Thursday, so until then..keep up the good fight, y como siempre, stay chingonx!

Baked Crema Mexicana Donuts

Baked Crema Mexicana DonutsIt’s Thursday!

AKA T-2 Weeks till I get to go to Colima for the weekend to celebrate my birthday con mis abuelitos! AHH!

Lately, I’ve been stumbling upon a ton of old music I used to hear around me when I was younger and it’s put me in a very nostalgic mood.

When I was younger, every Sunday, like clockwork, mí  papá would wake me up at 6 am so I could go out to Riverside with him para la leche caliente.

If you’re not sure what that is, people would head out to someone’s ranch where they’d milk the cows and we’d all drink the fresh warm milk (hence leche caliente) con chocolate y ellos con piquete.

We did that every single Sunday, but we always stopped to grab donuts. It used to really annoy me, but my dad always had the same CD’s on rotation –which included Pedrito Fernandez, Chelo, Lorenzo De Monteclaro, and occasionally something with banda in it.

I don’t think I’ll ever forget the lyrics to  “La de la Mochila Azúl”.

I can’t even tell you how many times we watched Pedrito’s films either.

What did your parents listen to?

It’s funny to think how much more you start to appreciate the little things as you get older.

Mole Coloradito Deviled Eggs

How’s your week so far?

A lot of people around the U.S participated in #DayWithoutAnImmigrant last week and it was really nice to see everyone on social media sharing their stories. For me personally, it’s important to never forget my parents and their struggles because they came to this country with the intent to provide a better life for myself and my siblings.

Both of my parents came to this country at a very young age. My dad was 19 y mi mamá was 17. As most of my dads siblings came into this country, they all eventually settled in Santa Ana.

Mole Coloradito Deviled EggsFor about 13 years, mi papá worked at a factory making drive-thru sensors making 7 dollars an hour–that was a little under 600 dollars a paycheck. They always paid their taxes, and never sought government aid.

Can you imagine having to feed a family of five on that kind of a budget?

Neither can I.

Pero mís papás lo lograron.

We shared a 2 bed/1 bath house with my aunt and her family. At one point, there were 11 of us living under one roof, and It was always really crowded, but we had no other option.

When I got a little older my mom used to tell me about all of the really tough times, and how my dad used to cry sometimes because he couldn’t even afford to buy me a Happy Meal when I’d ask for one, and it makes me feel like a total brat for not being more aware at that age.

It really frustrates me to see trolls tearing down and making assumptions about immigrants, what would they know about the struggle? We’re all human, and we all deserve the same fighting chance at a decent life. ¿Verdad?

Cooking has always been a stress reliever for me, and in these times I hope you all find something to center yourselves bc self care is very important!

We’re going to make deviled eggs with mole coloradito because I’m kind of obsessed with deviled eggs. No se porque, but they are so addicting!

This is totally off topic, pero is there a song you’ve been stuck on lately?

I’ve had Jenni Rivera’s rendition of Basta Ya on repeat and I cannot get it out of my head! There’s just something about the strong fem presence she had that has been speaking to me lately.

 Que descanse en paz!

¿Cómo estàn?

I hope you’re having a great week, y espero que estén bien!

I can’t believe it’s Valentines Day, I feel like we were just celebrating New Year’s just a few days ago.

I feel like there’s so much to address since last week, but where do we even begin?

Mole Coloradito Pulled Pork SlidersI met mi media naranja 7 years ago, and this year we’ll be celebrating our 7th anniversary!

We were living 500 miles apart when we first started talking to each other. We’d chat on and off and I thought he was the coolest guy I had ever met. He was funny, incredibly handsome, charming, loved to cook, appreciated art, and had the most beautiful blue-grey eyes I had ever seen.

One weekend, he happened to be visiting San Francisco with some friends (I was living in Fresno at the time), and I jokingly said I’d hang out with him that night since he couldn’t get into the bars yet, and he jokingly agreed. I stewed over wether or not I wanted to make the three hour drive, but after work I rushed home packed some clothes and made my way to SF.

He didn’t think I was being serious, but I made my way to San Francisco that night and we spent the rest of the night walking back and fourth along Pier 39 getting to know each other, and we’ve been together ever since.

Do you want to get married?

¡Por supuesto! But it’s kind of a big expense, so we’re going to wait–there’s no rush!


Do you want kids?

YES! YES! YES! If I could, I would have birthed three by now, but that’s not possible, and the odds are against us when it comes to adoption, aaand a surrogate would be too expensive. So we’ll see what the future has in store for us. We’re content with our two dogs for now.

But, enough about us.

Let’s talk about these sliders.

I’ve been having this pulled pork for the past few days for lunch, and I cannot get enough of it!

It’s so juicy and because of the peppers in the mole coloradito, the end product reminds me of birria but a little sweeter. It’s so good!

Because it is a little on the sweet side, we’re balancing our sliders with a crunchy lime slaw.

Make these as an appetizer, or make these as a full-sized sandwich. Make your own rules and be your own bad bitch!

I hope you have a great Valentines day, and if you’re not celebrating today, set a day aside for yourself and pamper yourself because self-care is important!
