Breakfast Tortas

  • For the tortas
  • 2 bolillos
  • ⅓ cup refried beans
  • ⅔ cup chorizo, cooked
  • 2 fried eggs
  • Toppings
  • sliced white onion
  • sliced avocado
  • salsa
  1. Directions:
  2. Start by slicing your bolillos in half and toasting them until they are a nice golden brown.
  3. To assemble the tortas:
  4. Schmear a little bit of the refried beans on each half of the bolillo. Add ⅓ cup of the cooked chorizo evenly over the bottom half of the bun, and top with the fried egg. Add your favorite toppings and place the top half of the bun and serve.
